Mamezara,whose Chinese characters literally mean “bean desh,”are shallow,tiny dishes that I had always called “oteshouzara.”
The word “oteshouzara” was derived from teshiozara salt dishes that were used for taking a pinch of salt by hand to season food at the table.
The word “teshio”evolved into the expression “teshio ni kakeru,”meaning “to raise by hand woth tender care.”
豆皿とは、”おてしょ皿”と慣れ親しんでいた浅く小さな皿のことで、”手塩にかけて育てる”という時の手塩がその由来である。
